Spicy baked orzo

  Orzo looks like rice, but it's actually a very small pasta. It is particularly delicious in cold pasta salads, but today we're eating it hot. This dish makes a light main course or a satisfying side.  To make it heartier, I'd recommend baking it with chicken or fish, or serving it atop crusty bread as a bruschetta.   I was first exposed to the idea of using couscous in parfaits when my dietetics class visited HyVee for a presentation by their dietitian. Leek and Spinach Frittata

Cooking can feel like work, and there are many times when life gets in the way and it doesn't sound like something fun to do.
