Italian White Bean Soup

Soup season is the best. As much as I enjoy cooking, I also enjoy being able to make a big batch of one item and eat leftovers all week, simplifying my routine and freeing up more time for other things. This Italian White Bean Soup is a new one, and it's so easy and tasty that I'm sure it's going to make its way into this year's fall rotation. Serve it up with some garlic bread and YUM.  read more[...]

Crunchy Oven Tofu

For a very long time, I really thought I hated tofu. It had a weird, soft texture, it tasted like nothing, and it fell apart easily. Why eat the stuff? But then, this recipe from Cookie and Kate came along and changed all that. She managed to take that spongy, weird brick of soybeans and turn it into crispy, crunchy cubes of flavor, and now tofu makes it on to my plate at home regularly. Try it out for your next meatless monday meal and you won't be sorry! read more[...]

White Bean Quesadillas

I've said it before and I'll say it again: you can never have enough quick meal recipes up your sleeve. Quesadillas make for a super easy and speedy meal, and adding in an extra plant (beans, veggies) can pump up the flavor and the fiber content. Beans are chock-full of fiber, protein, B-vitamins, iron, and minerals, and I love that so much nutrition can be packed into such a humble (and cheap!) food.  read more[...]

Mexican Street Corn

Happy [almost] birthday, America! I hope everyone is enjoying this holiday weekend, spending time with loved ones, and practicing a little R&R. After some much-needed time in the woods and in the kitchen, I'm back in work mode today and bringing some Mexican Street Corn your way! There has been a lingering chance of rain and thunderstorms in the STL area this 4th, so the backup plan to burgers and grilling in this house is carnitas and street corn. Not a very American menu, but a super delicious one nonetheless.  On this holiday celebrating freedom, le[...]

Simple Burst Tomato Pasta

My favorite recipes to share aren't the ones that look extravagant or take hours of prep to make. They're the practical ones: the ones that I myself make on a regular basis, the ones that can be whipped up on a weeknight, the ones that take under an hour to prepare. Sometimes it's fun to spend hours cooking something new and elaborate, but most of the time, I want to cook something that's tasty, fast, and gets the job done. Like this pasta. I started making this pasta when I had my first real garden and my Super Sweet 100 tomato was going crazy, vining all over[...]
