Easy Vegetable Pad Thai

This pad thai recipe has been a house favorite for a while now, and I'm finally getting around to sharing it with you. It's an easy weeknight meal that comes together quickly and is sure to satisfy that noodle craving. Because sometimes you just need some sweet and tangy noodles, amiright?  Whatever you do, don't leave out the garnishes. Lime, cilantro, and peanuts make this dish. If you're not a fan of cilantro, some sliced scallions would be a tasty swap.  This dish is excellent as-is, but feel free to add a protein source. I suggest sautéing[...]

Sweet Potato Smoothie, Two Ways

Merry Christmas, everyone! I truly hope your holiday season has been filled with people you love, tasty food, warmth, fun, and laughter.  This is not a holiday recipe. It's also not a post-holiday detox recipe (don't even get me started on those). It’s December and I’m going to share a smoothie recipe with you. Two, actually. I’m typically not a smoothies-in-winter gal, but this was too tasty and unique not to share. Plus, they're made with sweet potatoes, a fall/winter crop. Yes, sweet potato in smoothies. Interested? The first ti[...]

Pumpkin-Sweet Potato Crumble

I sat for a long while trying to find the words I wanted to share with you this Thanksgiving week. This holiday, at its core, is one I love: it involves surrounding ourselves with people we care about, sharing a delicious meal, and remembering the things we're thankful for. What a beautiful concept! For my clients who struggle with eating and body image, however, Thanksgiving can be stressful, guilt-filled, and followed by compensatory, self-punishing behaviors like restriction or over-exercise. Many people without eating disorders think in this same fashion,[...]

Rhubarb-mint granita

Everybody knows ice cream, and you've probably had sorbet, sherbet, frozen yogurt, snow cones, and gelato. But have you been introduced to granita? I was first exposed to granita in Italy when I studied abroad during college. It's a semi-frozen dessert made from water, sugar, and other flavorings (most often fruit or coffee). It's wonderfully icy, soft, and refreshing, and you don't need an ice cream maker to make a batch at home! After combining the ingredients, granita is made simply by freezing in a flat container, scraping the top with a fork periodical[...]

Shaved asparagus salad

This beautiful and tasty recipe for a shaved asparagus salad is perfect for a summer picnic. I'm a little late in getting this out - I originally created this recipe when asparagus was in season at my local farmer's market, but it would still be delicious with late-season asparagus. It's lemony and super fresh-tasting with just the right amount of salty, cheesy punch. It takes a bit of patience to shred the asparagus with a vegetable peeler, but it seems to be the best way. My mandoline is usually stellar but didn't do a great job with this task. Th[...]
