Green on green salad

Spending time outdoors can be a great mood-booster. Try it sometime: take a barefoot walk around in the grass, lay on a blanket on the lawn, or cartwheel down a grassy hill. We know that spending time outdoors can have real health benefits, and being outside can give us perspective and remind us how big the world is outside of our busy and chaotic lives.  This salad reminds me of the things I love about the outdoors: lush shades of green, a variety of shapes and textures, and sharp flavors and smells. Use whatever greens you like. The arugula and Tuscan[...]

Hibiscus-mint popsicles with raspberries (Recipe Redux)

This month's Recipe Redux theme is Floral Flavors. Participating bloggers were instructed to create healthy recipes utilizing edible flowers and share them with the internet world. There are a lot of flowers that add beauty and flavor the the culinary world: roses, lilac, saffron, squash blossoms, and lavender to name a few. I elected to use hibiscus: I love their beautiful, rich, red color and tart flavor. Asian black rice salad

Since converting to full-time at my job, I've become much more appreciative of the Portable Meal, and salads like this one that can be served at room temperature are awesome for taking to go.  This rice salad features black rice, a slightly sweet and nutty variety with a chewy, creamy texture, and the bright vegetables look stunning against the dark color. Serve as a side or top with a grilled salmon fillet and call it a meal. One aspect of nutrition that I think is kinda cool is the value of the pigmentation of our fruits and vegetables. It's so[...]

Calling all working professionals, busy moms, and people who don't want to spend all evening making dinner: these shrimp packets are an incredibly delicious and quick weeknight meal. They take no time to assemble, they cook in just 10 minutes, and you can eat them straight from the foil (no dirty plates to wash, ya'll!). If couscous isn't your thing, quinoa or rice would work equally well. This amazing, sweet salsa is truly the star of this meal.  Shrimp and couscous packets with avocado-mango salsa Adapted from Self.com Serves 4 1 cup dry whol[...]

House guacamole

Happy Cinco de Mayo! Does anyone actually know why we celebrate this day? Because I didn't until I Googled it just now. In Mexico, it's a celebration of the Mexican army defeating France in the Battle of Puebla during the French-Mexican war. To Americans, it's a wonderful day that requires the consumption of Mexican food and salty drinks. No matter your reason for celebrating, there's no better way to commemorate this day than with a big bowl of guacamole. This guac is a favorite in the Larson home, and until I went to write this recipe, we had never measu[...]
