Watermelon Lemonade

It's been pretty perfect patio weather here in the midwest, and I've got a drink that can bring a little extra sunshine to your backyard gathering. This Watermelon Lemonade is simple to make, it's filled with vitamin C from both the watermelon and lemon, and its color is gorgeous.  If you're feeling fancy, top it off with sparkling water (or champagne if your backyard gathering includes mimosas) and extra lemon garnishes.  If you make this recipe at home, share with me on Instagram and use #strongrootsnutrition so I can see! //Taylor SaveSave Sa[...]

Greek-ed Out Couscous Salad

This grain salad was exactly what was needed after a steamy couple of weeks in the Midwest. It's hearty enough to be filling but tastes light and cool on a hot day. Grain salads tend to make great dishes for advance preparation; they can typically be served cold, warm, or room temperature, they last several days in the fridge, and they only get tastier as they sit and their flavors meld together. So many thumbs up.  This dish will be even better if you can find a really good feta. I stumbled across the most delicious Greek feta when[...]

Summer Minestrone with Farro

A good pot of soup is such a good thing. I love to make a big batch at the start of the week and have enough leftovers for days of packable lunches. Pair with a loaded-up salad and a big slice of crusty bread and done! This soup does well with this make-ahead method: the vegetables hold up to reheating, and a fresh drizzle of pesto and grating of Parmesan easily brings it back to life.  Prepping meals in advance can be extremely helpful when you don't necessarily have time to cook every day. Cooking in bulk not only allows you to spend less time in[...]

Sweet Broccoli Salad

Who doesn't love a good broccoli salad? This potluck favorite has been revamped a bit with a yogurt-based dressing while maintaining the things you love about it. Crisp raw broccoli, creamy dressing, soft cashews, sweet raisins, and zesty onions marry together wonderfully to create a dish worth sharing. Learn to love the brassicas! Cruciferous vegetables like broccoli are packed with nutrients like vitamin K, folate, vitamin C, and fiber. To retain as many nutrients as possible, use gentle cooking methods like steaming, and eat them raw, like in broccoli[...]

Earl Grey-Hibiscus Sun Tea

Sun tea is the crock-pot version of tea brewing, and it couldn't be simpler. Simply fill a jar with water, toss in a few tea bags, set in a sunny spot all day, then chill and enjoy. Here in the midwest, we're teetering on the edge of summer and fall, and there are still a handful of warm, sunny days left that are perfect for making a big batch of tea to enjoy throughout the week. So break out your biggest jar and let's make it happen! Hibiscus tea (think Tazo Passion) has hit an all-time high in popularity this year. It's easy to understand why when we take tha[...]
