Seeded vanilla date bars (Recipe Redux)

It's time for Recipe Redux again! This month's theme is "Bars and Bites for Brown Bags," and bloggers were asked to share their favorite granola bars or balls to jazz up a portable lunch. As someone who packs lunch often, I know that brown bag meals get boring pretty quickly. These bars do a great job of spicing up any lunch hour, and they're one of my favorite recipes to date (pun totally intended). They're chewy, delicious, and a great contrast of sweet and salty flavors.  What's so great about dates? Dates are high in a type of fiber calle[...]

Spicy dill refrigerator pickles

Cucumbers can be a valuable addition to many dishes. They add fantastic fresh flavor to my Tzatziki on some creamy-crunchy Black-Eyed Pea Falafel. A few slices of cucumber and a squeeze of lemon juice transforms ordinary water into sippable spa heaven. Sushi isn't really sushi without some cucumber strips inside. I'm totally intrigued by Joy the Baker's Cucumber Gin Salt and Pepper Cups.  Homemade pickles are crazy simple to make and their flavor is unmatched by grocery store brands. Kirby cucumbers are classic for pickling, but Pe[...]

Ancient grains granola

When I pass bags of granola on a grocery store shelf, I can't help but think: Somebody out there is making a killing by selling a little package of oats, oil, and sweeteners - ingredients that cost next to nothing - for $8. Made at home, it'll be just as delicious, and you probably have all the ingredients in your pantry already. Making your own granola at home is super easy and allows you to choose the flavors in the final product. This recipe is incredibly simple to make, however, if you'd like to start with more straightforward ingredients and a sh[...]

Hibiscus-mint popsicles with raspberries (Recipe Redux)

This month's Recipe Redux theme is Floral Flavors. Participating bloggers were instructed to create healthy recipes utilizing edible flowers and share them with the internet world. There are a lot of flowers that add beauty and flavor the the culinary world: roses, lilac, saffron, squash blossoms, and lavender to name a few. I elected to use hibiscus: I love their beautiful, rich, red color and tart flavor. The sticky, hot weather in the Midwest has been calling for fruity popsicles lately, so this was a great opportunity to create a sweet and tart floraly[...]

House guacamole

Happy Cinco de Mayo! Does anyone actually know why we celebrate this day? Because I didn't until I Googled it just now. In Mexico, it's a celebration of the Mexican army defeating France in the Battle of Puebla during the French-Mexican war. To Americans, it's a wonderful day that requires the consumption of Mexican food and salty drinks. No matter your reason for celebrating, there's no better way to commemorate this day than with a big bowl of guacamole. This guac is a favorite in the Larson home, and until I went to write this recipe, we had never measu[...]
