Shrimp and couscous packets with avocado-mango salsa

Calling all working professionals, busy moms, and people who don't want to spend all evening making dinner: these shrimp packets are an incredibly delicious and quick weeknight meal. They take no time to assemble, they cook in just 10 minutes, and you can eat them straight from the foil (no dirty plates to wash, ya'll!). If couscous isn't your thing, quinoa or rice would work equally well. This amazing, sweet salsa is truly the star of this meal.  Shrimp and couscous packets with avocado-mango salsa Adapted from Self.com Serves 4 1 cup dry whol[...]

Carrot-zucchini patties with hummus and Greek sprout salad (Recipe Redux)

It's time for a Recipe Redux challenge again, and this month, we're celebrating St. Patty's day with creative patty stacks! These carrot-zucchini patties are perfect for appetizers or a side, or you can slap them on a bun or put them in a warm pita and serve as a more filling dinner alongside grilled mediterranean vegetables like summer squash and artichokes. They are made from a wet batter, so they come off the hot pan with a deliciously creamy interior that is offset nicely by the crunchy sprout salad on top. A word on food safety: store-bought alfalfa[...]

Soba noodle bowl with creminis and cabbage

I've found that for many of my clients, lunch variety can be a challenge. Most people do not have schedules that allow for stopping mid-day to cook something for lunch, so packable or ready-made items are key. Sandwiches and wraps are staples for many. Sometimes salads are nice. Dinner leftovers can be useful. If you happen to have a few minutes to spare, this soba noodle bowl is a quick, satisfying, minimally inconveniencing meal that will help you make it to dinnertime. Noodle bowls such as this also reheat nicely if you need to take on-the-go.  On[...]

Goat cheese margherita flatbread pizza

Everybody likes pizza. That's a fact. And because I am one of these pizza-loving people, I was excited to hear that this month's Recipe Redux theme was "Pizza Party." You see, pizza is sortof a thing around here. For the past couple of years, my parents have had a weekly tradition of inviting over everyone they know and making an obscene number of pizzas on their barbeque grill. They have a system: Mom mixes up and rolls out the dough and lays it on a pizza peel for Dad, who takes it outside, slides it onto clay grilling stones, loads it up with toppings,&[...]

Black-eyed pea and zucchini falafel

It's Recipe Redux time again! This month's theme is Good Luck Foods, and we were instructed to create a recipe using foods people typically eat on New Year's Day to bring good luck for the year: things like long noodles (to promote longevity), pomegranates (which symbolize prosperity), and pork (symbolizes progress). Black-eyed peas are a traditional New Year's Day food in the south. It is thought that the legumes were originally planted to feed livestock, but during the Civil War when many crops were destroyed or stolen, the black-eyed peas remained and became a[...]
