Easy Vegetable Pad Thai

This pad thai recipe has been a house favorite for a while now, and I'm finally getting around to sharing it with you. It's an easy weeknight meal that comes together quickly and is sure to satisfy that noodle craving. This recipe - and variations of it - has been a staple in my house for some time. It takes very little effort to throw together, cooks quickly, and tastes like a pricey restaurant entree. Citrus Shrimp Ceviche

Ceviche is a wonderfully brilliant concept. Simply coat raw seafood in citrus juice and allow the acidity to cook the fish. It's delicious, easy, and the essence of beach food. Fortunately, we don't have to live near the ocean to enjoy ceviche.   Sushi. Need I say more? Sushi is the best. Spending $100 on a sushi dinner for 2 is not. Spending $20 on ingredients for all-you-can-eat rolls totally is.
