Sweet Potato Smoothie, Two Ways

Merry Christmas, everyone! I truly hope your holiday season has been filled with people you love, tasty food, warmth, fun, and laughter.  This is not a holiday recipe. It's also not a post-holiday detox recipe (don't even get me started on those). It’s December and I’m going to share a smoothie recipe with you. Two, actually. I’m typically not a smoothies-in-winter gal, but this was too tasty and unique not to share. Plus, they're made with sweet potatoes, a fall/winter crop. Yes, sweet potato in smoothies. Interested? The first ti[...]

Kale-Quinoa Salad with Tahini Dressing

When trying to learn to eat intuitively again, "meal prepping" food in advance can be a huge help. When you have an arsenal of recipes that hold well for several days, such as this salad, you can prepare food on the weekends to eat throughout the week so you always have some things on hand to eat quickly when hunger strikes. This can also save you time, effort, and money later! Kale's tough leaves can handle being covered in dressing for several days, making it the queen salad green when it comes to advance preparation. Add this recipe to your meal prep arse[...]

Quinoa Breaded Chicken

Most people have used some form of grain - often breadcrumbs or flour - to bread chicken, but have you ever thought of rolling your chicken in a cooked grain crust? This quinoa breaded chicken is a twist on a classic technique and adds a nutty, crunchy texture. Try breading whole chicken breasts (as shown here), or bread after cutting chicken into tenders. Either way, dip in your favorite sauce (BBQ, buffalo, ranch, etc.) and enjoy! Does that delicata squash salad look familiar?  If you try this recipe or any others, share with me on[...]

Pumpkin-Sweet Potato Crumble

I sat for a long while trying to find the words I wanted to share with you this Thanksgiving week. This holiday, at its core, is one I love: it involves surrounding ourselves with people we care about, sharing a delicious meal, and remembering the things we're thankful for. What a beautiful concept! For my clients who struggle with eating and body image, however, Thanksgiving can be stressful, guilt-filled, and followed by compensatory, self-punishing behaviors like restriction or over-exercise. Many people without eating disorders think in this same fashion,[...]

Delicata Squash Salad

Roasting is a great way to take vegetables from meh to amazing. In roasting, the sugars in the food caramelize and interact with one another to create a brown crust, which is loaded with extra flavor. This brown flavor is usually characterized as nutty, sweet, and toasty - doesn't that sound wonderful this time of year? This roasted squash salad combines tender delicata squash and brussels sprouts with salty feta and sweet, balsamic-soaked cranberries to create a wonderful fall-inspired side dish.  Most squash varieties like butternut and acorn have a t[...]
