Spring pavlova with earl grey whipped cream and rhubarb

The food philosophy that I try to promote has been hugely influenced by my latest job at an eating disorder treatment center. I've seen the damage that rigid food rules can do. I've eaten meals with patients while they cry onto the plate of pasta they're terrified to eat. I've heard individuals describe the overwhelming guilt they feel after every bite and their belief that that they don't deserve to eat. Food is a great unifier - nobody should have to live with anxiety and rigid guidelines around their meals. Mental health is just[...]

Mango-coconut sherbet

All of you who are experiencing this Midwestern backslide back into winter alongside me -- this one's for you. It may be cold with a chance of snow outside, but this mango-coconut sherbet is tropical sunshine in a bowl. Cheers! Coconut has held its place in the spotlight for the past couple of years. Touted to be a miracle cure for a variety of ailments, coconut oil has been flying off the shelves like crazy. The truth, though, is that no one food is capable of having a profound effect on health, for better or worse. My thought? If you like the taste of co[...]

Bruléed grapefruit

It's time to eat up all the ripe citrus you can get your hands on - it's grapefruit season! Grapefruits sometimes get a bad rap because of their tart and occasionally bitter flavor, and for those of us not living in Texas or Florida where grapefruits are most commonly grown, getting an eh grapefruit is fairly common. But good news: eating them in season greatly increases your chances of getting a good one with a tasty balance of sweetness and tartness. More good news: this recipe can transform even the most mediocre grapefruit into something magi[...]

Wild blueberry chia pudding

[Disclaimer: By posting this recipe I am entering a recipe contest sponsored by the Wild Blueberry Association of North America and am eligible to win prizes associated with the contest. I was not compensated for my time.] I just returned home from a crazy, short, wonderful weekend visiting family in northern Minnesota, complete with winter travel trouble and getting slapped in the face by -25F temperatures. That would be -25F without windchill. Let's not think of how high that negative number gets when you factor in the wind.  Time for a[...]

Peach and elderflower ice cream

Upon arriving in Denver, I was gifted some beautiful Colorado peaches from a roadside stand. The box (which was huge and overflowing) was full of some of the tastiest, juiciest peaches I've ever had, and it cost a stunning $10.  What the whaaat?  Apparently peach season is a magical time here in the mountains. The only problem with having huge amounts of delicious, fresh peaches is having to eat them all before they go bad.  This was a huge box of peaches for only 4 people.  But it would be such a shame to let them go to waste, so[...]
