Baked Berry Oatmeal

Monday morning should always come with baked oatmeal. It's warm and soft with just the right amount of sweetness and crunch - exactly what a Monday needs. In my opinion, the best way to go about it is to layer frozen fruit, dry ingredients, and wet ingredients in a baking dish (and never stir!). The result is a deliciously gooey fruit-on-the-bottom, creamy oatmeal-on-top effect that can't be beat.  This is a recipe that I encourage you to play with. That garlicky toast is a must for mopping up runny egg yolks and any lingering sauce. The key is to poach the eggs until the whites are just set and the yolks are still runny. Keep a close eye on them during the cooking process to achieve this balance.&n[...]

Maple Pecan Oat Bars

When counseling clients, a consistent theme that comes up is convenience. It's challenging to juggle everything life throws at us, and we often don't have a surplus of energy to use for planning meals and snacks. The average person could skip a meal or snack and go hungry for a few hours and life will go on (although your productivity and mood might suffer!), but for my clients recovering from eating disorders, adequate and consistent nourishment is totally, 100% vital. Skipping a meal or snack can be the catalyst for a relapse if this behavior isn't cau[...]
